Salt & Lime is the culmination of a 10 year old boy’s dream. Ever since he can remember, Chef Zach Ficke loved to cook! His passion for cooking stemmed from assisting in cooking family dinners each night, until soon thereafter, his parents realized they could relax and upgraded him to sole dinner cook, preparing multiple course meals for family and friends!

Chef Zach’s passion for food drove his culinary career.

Salt & Lime is a unique, chef-driven, fast-casual modern taqueria that plays on the iconic idea of the taco. The balance of contrasting textures and complementing flavors wrapped in handmade blue corn and flour tortillas is simply exquisite. These are not your authentic Mexican tacos. Internationally influenced and seasonally driven, the menu is ever-changing and intriguing. The same philosophy carries into the beverage menu where guests will find seasonal flavors with fresh pressed citrus. The details do not stop with the menu. Salt & Lime’s decor transports guests to the breathtaking white sand beaches and sparkling blue water of Tulum, Mexico with wicker lighting, tropical plants, colorful tiles, and hand selected photos/artwork.

About the Chef/Owner

After finishing his homework each day, Chef Zach watched cooking shows. Those, coupled with the occasional cooking class, led to his desire to attend culinary school. At Kendall College (Chicago, IL) he graduated at the top of his class with an Associates in Culinary Arts. The passion within Chef Zach did not stop there though. He went on to attend Johnson & Wales University in Providence, Rhode Island. Graduating Summa Cum Laude with a Bachelors in Food Service Management, Chef Zach returned to sunny Southern California to pursue his career.

Utilizing his culinary education and experience in restaurants including GT Fish and Oyster (Chicago), Watermarc (Laguna Beach), WaterGrill (Costa Mesa), Gulfstream (Newport Beach), and Il Palagio (Florence, Italy), the concept of Salt & Lime was born.
